I would probably add the rose flavoring at the end of the boil. Fermentation should drive away some of the flavor/aromatics of it and keep it from being overpowering. Or at least that's my take on it. Looking forward to reading how you wind up making it and how it turns out. Also, that's a solid wit recipe to base it on. I called it Love Potion. I used no hops. It was made with honey, ginger, and rose hips and petals. It had a lighter tripel base. The rose petals gave it a tannic note.
